Crunchy Granola

After all the feasting during the holiday season (not quite finished yet!) it is time to get back to basics. I started this morning by making granola for the kids. This simple recipe takes next to no time to make, and is a favourite in our home. My goal is to make it more often! Can be made gluten-free (check your oats!) and chocolate chips make this extra delicious as well as nutritious!


3 cups rolled oats
1/3 cup pumpkin seeds (or sliced almonds)
1/3 unsweetened coconut
1/4 cup sunflower seeds
2 Tbsp. flax seed, freshly ground
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
1/3 cup honey
1/2 cup raisins or dried cranberries (opt.) or
1/2 cup white or dark chocolate chips (opt.)

First, preheat your oven to 325 degrees F.

Add the first 8 ingredients to a large bowl. Mix well. Melt the honey in the microwave or in a small pot on the stove and pour over the granola mixture. Stir until well combined.

Pour the granola onto a parchment-lined baking sheet and spread evenly.

Bake for 15-20 minutes, stirring once, until a light golden colour. Remove from the oven and stir in the raisins, if using. Cool completely. Add the chocolate chips at this point, if desired. Transfer to an airtight container. This makes a great gift!
