Christmas Baking 2015 – Date Squares
Each of the kids chooses a dessert to make for Christmas and one of the boys makes these every year. This recipe was adapted by me to be dairy free. The recipe even won first prize at the fair. Prepare the date filling first. Feel free to make extra date filling if you like lots in your squares.
- flour 2 cups
- baking soda 1/2 tsp.
- salt 1 tsp.
- quick oats 2 cups
- brown sugar 1 1/2 cups
- lard 1 1/2 cups
Place all of the ingredients into a large mixing bowl. Work together with hands until crumbly. Spread half of the oat mixture into a greased and floured 9×13 pan. Add date filling (recipe follows) and spread out evenly over the oats. Pat remaining oat mixture on top of the date filling. Bake at 350 degrees F. for 25 minutes.

- water 1 cup
Cut the dates into a medium saucepan making sure there are no pits. Add the water. Cook over low heat until water has evaporated and dates have mushed. Cool.
