Salad Fiesta – Romaine and Clementine
A quick and easy salad, using seasonal clementines to dress it up. Adjust quantities for single serving. Great with a meal or on its own. Enjoy!
ROMAINE AND CLEMENTINE SALAD
1 romaine lettuce
4 clementines, peeled and broken into segments
chopped onion, to taste, if desired
Wash your lettuce leaves and pat dry. Chop up lettuce and place in a bowl with segments of clementine and onion, if using. Add dressing.
1/3 cup olive oil
1/3 cup red wine vinegar
1 Tbsp. honey or sugar
half a small onion, chopped
salt and pepper to taste
Place all of the ingredients in a mason jar and cover with lid. Shake and pour on salad until salad is coated. Toss salad and serve.
Options: add in almond slices, dried cranberries or feta cheese.
