Gluten Free Pancake Tuesday
These are the tastiest gluten-free pancakes ever…trust me! They taste like french toast. Enjoy!
Gluten Free Pancakes (serves 1)
1 egg, beaten
1 Tbsp. liquid (cream, milk, coconut milk, water, etc.)
1 Tbsp. oil (or melted butter)
1 Tbsp. sweetener (sugar, maple syrup, a little stevia, etc.)
1 Tbsp. coconut flour
pinch of nutmeg, optional
Mix all ingredients together, beating well with a fork. Heat a pan with a little oil. Using a soup spoon, spoon the batter onto the pan. Flip when edges start to dry. Serve with maple syrup, peanut butter, jam or your choice of topping.
